Support UTF-8 characters in email subject lines

Removed .to_ascii conversion from email subjects in mo_mail.
Modern email standards (RFC 2047) support UTF-8 via MIME encoding,
so this workaround is no longer needed.

This enables proper display of author names with diacritics
(e.g., Müll. instead of Mull.) and supports international languages
in email subjects.

Updated test fixtures to expect UTF-8 characters (restored umlauts)
and removed .to_ascii workarounds from three mailer tests.
