fix: restore pip/pydoc hermit symlinks for python3 3.11.4 (#5285)

Fixes hermit CI failure after the Python 3.14.3→3.11.4 revert. The
revert updated `python*` symlinks but left `pip`, `pip3`, `pydoc3`
pointing to the deleted `.python3-3.14.3.pkg` and kept stale
`pip3.14`/`pydoc3.14` stubs.
